Vegan Quesadilla

Fed Up: a 30 day Vegan Experience

Happy Sunday everybody! It is Day 10! I created an amazing quesadilla that is vegan friendly. A few of my friends were curious to see how I would like it or if it would be as satisfying as a traditional quesadilla. Hands down, this has been my favorite vegan meal thus far. Like many of you, I find recipes and tweak them to my liking…aka add more seasonings.

Things you’ll need:

  • 2 tbsp. olive oil
  • 2 tsp. ground cumin
  • 1/2 tsp. dark chili powder (the recipe calls for chipotle chile powder but I used what I had)
  • 1/4 tsp. salt
  • 1/4 tsp. black pepper
  • 3 garlic cloves, minced
  • 1/4 tsp. onion powder
  • 2 bell peppers, sliced into strips
  • 1 medium zucchini, chopped
  • 1/2 medium red onion, sliced into strips
  • 1 cup cooked black beans
  • 1/4 cup chopped fresh cilantro
  • 4 corn tortillas

Instructions:

1. Stir olive oil, cumin, chili powder, salt, pepper, garlic and onion powder together in a large bowl.

2. Add bell peppers, zucchini, minced garlic, red onions and cilantro. Mix until veggies and seasonings are distributed evenly. If you know me, then you know I use lemons on everything. It’s my favorite thing to cook with… so slice a lemon in half and squeeze it into the veggie mix.

3. Grab a large skillet and place over medium-high heat. Add mixture to skillet and cook until the veggies are crisp. Add beans (they should already be cooked) and remove skillet from heat.

4. In a small bowl, mash the avocados with a fork. Once mashed, grab a spoon and spread avocado mix evenly onto corn tortillas. Place veggies on corn tortilla and fold. Be gentle so they don’t rip.

5. Lightly oil the skillet with olive oil and place over medium heat. You can use the same skillet if you’re not trying to have a pile of dishes. Place one or two tortillas onto skillet and grill for 4 minutes on each side. Repeat until all quesadillas are cooked, adding oil to the skillet as needed.

6. Serve with hot sauce or salsa. I used Garlic Chipotle Salsa from Trader Joe’s.
