As I said in my last post, I will be going vegetarian for one month (or more) for a school project called the Do One Thing project. So far I have maintained my vegetarian diet. It actually has not been as hard as I expected. I have not had the urge to eat any meat and have not had any problems with it.

One problem with me being vegetarian is: I am VERY picky. If my family (Mom, Dad, and younger sister) and I went out to dinner before I went vegetarian I ate either a burger or chicken or pizza or steak tacos or cheese pupusas, etc. Now all I can eat is cheese pupusas and pizza, which are both cheese. This is a problem because it is unhealthy. Now you might be wondering, “Why don’t you just try different things at home and at restaurants?” Well that’s related to the problem that I said before: I’m very picky. For example, in the last week I have had pizza almost every day and I have eaten pupusas twice. So I will start to try new things and be more open minded.

For the next few weeks I will be sharing some recipes that I encounter:

  • Simple Mixed Green Salad: This is a delicious healthy salad with a tad of sweetness. Ingredients: Olive Oil, Balsamic Vinegar, Salt, Pepper and a dash of Honey. I also love to put a few cut up cucumbers and some cut up onions in there. You can also put onions but I don’t like them.

This was my first week of being vegetarian and it was fun. I will keep you guys posted.
