I am not too fond of baking, but when I do, it’s customarily impulsive. And that implies-not having enough ingredients in the shelf to start with. I end up looking for substitutes over the net, I mean I am a girl, when I need a choco-lava cake, I need it NOW! Come on, let me live!?

One of these major ingredients is egg. Eggs bind and add moisture to a recipe. But what if you’re a vegan or are allergic to eggs? Oh wait, don’t need to panic, here’s a list of easily available egg substitutes that will surely rock put the baker in you!

Let’s Go Bananas! Yeah, Literally.

Okay, no kidding, bananas continue to top my list on easy egg substitutes. Wonderfully sweet, packaged in their own yellow jackets, bananas are available throughout the year!

This might impart an essence and a mild flavor of the fruit to the dessert, which could act as your secret ingredient too!

Vegetable Oil

Okay, no more excuses! If you have been living under a rock, only then I can expect you to not be having vegetable oil at home.

You might want to use it with caution as it oil tends to make the recipe too greasy.

Lime Juice

Freshly squeezed lemon/lime juice works out as a good egg substitute in certain recipes. It is more like a substitute for vinegar when that’s not readily available. The citric acid in the lemon mimics eggs’ ability to make the baked product light and airy.

You can use up-to 2 tablespoons of lemon juice for an egg to be replaced in a recipe. Also it’s suggested that it’s not used in recipes which uses more than 1 egg.

Water+Oil+Baking Powder

Whisk the following ingredients together, and use them in place of an egg.

When used in cookies and cakes, this combo fits in prefectly and no one would ever know that you didn’t use egg at all! The cookies are soft as ever and the taste is uncompromised!

Applesauce

You might want to mix some baking powder too here, but if all you have are apples, then use them to make some unsweetened applesauce and simply reduce the amount of sugar in your recipe.

Applesauce is also a popular healthy replacement for oil in many baked goods.
Using banana, applesauce and other pureed fruit in baked goods is a wonderful tactic to boost flavor and make them incredibly moist. Talk about a happy accident!

After successfully using these food substitutions, you may employ them for more than emergency back-up in the future. They are all vegan alternatives and, with the exception of vegetable oil, are more heart-healthy than eggs.
