Recipe: 30-Minute Goat Cheese Tart

Ingredients for pastry;

180 grams ground almonds
2 tbsp coconut oil
1 egg

Method;
1) Heat up coconut oil in small pan
2) When melted add to ground almonds in a large bowl and mix.
3) Crack the egg into the the mixture and mix until it you can use you hand to scoop up the mixture.
4) Wrap in cling film and leave in fridge for half hour.

For the filling;

1 small sweet potato grated
1/2 small red onion
150 grams hard goats cheese
4 tbsp olive oil
pepper

Method to make tarts;
1) Preheat oven to 150 degrees and place tiny bit of coconut oil in large muffin tin. About 4 to 5 inches.
2) Take the pastry out of the fridge, and roll out using the cling film as it can quite sticky. Cut out four circles using 4 inch cookie cutter.
3) Place on muffin tin and cook in oven for about seven minutes.
4) When cooked remove from oven and place the grated sweet potato, the cheese, the onion and one tbsp olive oil on each muffin. Season each one and cook in oven for further fifteen to twenty minutes.

Serve with a nice fresh salad for a light lunch, or with a meat dish for dinner.
