Do you want something delicious to eat? Has the excitement of the game got your stomach rumbling? Then we have just the thing for you.

The World Cup is in full swing and it’s time to enjoy some yummy vegan food with it. These snacks are perfect for a little World Cup fiesta with family and friends, whether they’re vegan or not.

So treat yourself, start cooking and enjoy the World Cup action.

HOMEMADE VEGAN DORITOS (3 WAYS)

Author: Fork & Beans Prep Time: 10 mins Cook Time: 15 mins
Total Time: 25 mins Yield: 48 chips

INGREDIENTS

  • 6 corn tortillas (make sure that these are on the thinner side–if not they will be crispy along the edges but a little chewier in the middle)
  • 1 Tbsp. olive oil
  • Seasoning of choice (see above)

INSTRUCTIONS

  1. Preheat your oven to 350 degrees. Line your baking sheet with a piece of parchment paper.
  2. Place your tortillas on top of each other. Cut into 8 pie slices.
  3. In a medium-sized bowl place the “chips” inside and drizzle the olive oil over them until each side and piece is nicely covered.
  4. Coat each chip with seasoning of choice by sprinkling the seasoning with a spoon over it, making sure that both sides are perfectly coated.
  5. Place on the baking sheet and bake for 12–15 minutes, rotating your pan at the 7 minute mark. You want the edges to be lightly browned but keep your eye on burning during the last 2 minutes.
  6. Allow to cool before thoroughly enjoying.

Sweet Potato Wedges Recipe with a Breadcrumb Crust

  1. Preheat oven to 500 degrees.
  2. Take 2 sweet potatoes and wash them thoroughly
  3. Cut the edges off the sweet potato
  4. Split the sweet potato into halves
  5. Cut about 6 long strips from each half
  6. Place the wedges in a bowl and set aside
  7. In a food processor or grinder, add 1 cup of panko crumbs
  8. Add 1/4 cup of oregano
  9. Add 1/2 cup of parsley
  10. Grind on low speed until it is finely ground.
  11. Add 1/2 cup of olive oil to the bowl of sweet potatoes
  12. Add 1/2 of the ground panko mixture from step 10
  13. Add 1 Tbsp of olive oil, if it is too dry
  14. Mix until all the potatoes are well coated
  15. Evenly space out the wedges out on a baking
  16. Place in the oven and bake for 15–20 minutes.

Recipe Notes

I only used 1/2 of this ground panko crumb mixture. I am going to store the rest for future use. Shelf life is about 1 month when stored in a cool, dry place The Panko Crumb Mixture will store well for about 1 month in a cool, dry place

Baked Buffalo Chickpea and Artichoke Vegan Taquitos

Ingredients

  • 2 can chickpeas (rinsed and drained) (or 3 cups cooked chickpeas)
  • 1 cup chopped artichoke hearts (frozen or canned) (drained)
  • 1 cup Butternut Mac sauce
  • 1/4–1/2 cup Buffalo style hot sauce (I used Franks)
  • 15–20 small tortillas (corn or flour — your favorite) (Use corn if gluten free)

Dipping Sauce, optional

Instructions

  1. Preheat your oven to 425 degrees F.
  2. In a large bowl mash the chickpeas with a potato masher or fork. Some larger pieces are ok, but you want the mixture to stick together.
  3. Add the chopped artichoke hearts, Butternut Mac sauce and buffalo style hot sauce and mix to combine.
  4. Scoop about 2 tbsp of the filling onto each tortilla and roll tightly. Place seam side down on a baking sheet.
  5. Bake 15–20 minutes until the tortillas are browning on the edges

Recipe Notes

1/4 cup hot sauce makes a nice mild heat, if you like things spicier feel free to add more.

The Butternut Mac sauce can be made ahead of time and stored in the fridge.

The Creamy Cumin Ranch, if using, can be made ahead of time and stored in the fridge.

The taquitos can be assembled and then frozen until ready to heat and serve. They may take a little longer to heat through.
