2 oz. gin
¾ oz. Rose’s lime juice
Tools: shaker, strainer
Garnish: lime wheel
Combine the gin and lime juice with ice in a shaker and shake until chilled. Strain into a chilled glass and garnish.

Tom Collins
1 ounce fresh lemon juice
1 teaspoon simple syrup
2 ounces London Dry-style gin
Soda water, to top
Tools: Shaker, strainer
Garnish: Lemon wheel or wedge, for garnish
In a cocktail shaker filled with ice, vigorously shake lemon juice, simple syrup and gin. Strain over fresh ice into a highball glass and top with soda water. Garnish with a wedge or wheel of lemon.
