How to Make a Seasonal Tomato and Melon Salad | Lemonade

Summer only comes around once a year, and even though we’re all spending a lot of time at home doesn’t mean we can’t enjoy this deliciously warm weather with a mouthwateringly fresh salad.

We teamed up with Chef Josh from Lemonade, who gave us the recipe to the perfect seasonal tomato and melon salad that screams “SUMMERTIME” from the rooftops. We can’t wait for a second longer–let’s get started.

Ingredients

  • Heirloom tomatoes (all colors and sizes)
  • Seedless watermelon
  • Cantaloupe
  • Fresh Basil (regular and opal)
  • Fresh Mint
  • Fresh lime juice
  • Cayenne pepper
  • Olive oil
  • Cotija cheese
  • Toasted pepitas
  • Flake salt

Method

  1. Mix lime juice, olive oil (3 to 1 ratio) with a spoonful of sugar, and a pinch of cayenne pepper. Stir it up to dissolve and set aside.
  2. Cut melons and tomatoes all into similar-sized, bite-sized pieces and place them in a large bowl. Season with a good pinch of salt and stir (gently) to combine.
  3. Tear basil and mint by hand, and add them to a bowl with tomato and melon. Reserve a little extra for garnish.
  4. Add some lime dressing to bowl with tomato, melon, and herbs and mix it well to combine. Taste a few pieces and adjust seasoning if needed (more salt, lime, cayenne, sugar). It should be tart and fresh with a hint of sweetness and a little spicy finish.
  5. Garnish with lots of pepitas, cotija cheese, reserved fresh herbs, and a little extra flake salt on top.
  6. Eat Summer.
