Day 18: Pancakes and Chinese Takeout
On day 18 of quarantine, I woke up and decided that I'd make pancakes. I just had an urge and just enough Trader Joe's buttermilk pancake mix to make two servings. I paired it with some butter, maple syrup, and homemade cold brew. I haven't been drinking too much coffee in quarantine, but I have a cold brew maker jug that was left in my dorm kitchen so I just keep that jug of cold brew in the fridge and drink from that once in a while. The pancake mix, butter, and maple syrup were also all left behind in my dorm kitchen.
No special recipe here; I just followed the instructions on the box. This constituted a brunch of sorts.
For a sort of lunch and later dinner, we ordered from Happy Hot Hunan, a Chinese place in the Upper West Side. I ordered pork with spicy peppers and ate a little bit in the afternoon and most of it for dinner.
It was really good and I really wasn't feeling up to cooking again that day. On the subject of takeout food, a lot of restaurants near me on the UWS that were open in mid to end of March are now closed. Thai Market, Sumo Sushi, and a few others all closed around the last week of March or on the first of April. If I had infinite money I would order from local businesses all the time to try to help them stay in business, but I unfortunately do not! Support local businesses whenever you can!
