Marcus Aurelius said this:

“Is your cucumber bitter? Throw it away.

Are there briars in your path? Turn aside. That is enough.

Do not go on and say “Why were things of this sort ever brought into this world?”

A lot of things in life are minor stuff, don’t let them linger and waste your mental energy

Do not sweat the small stuff and remember little things affect little minds. Do not be the man without shooting stars in the sky.

Do not demean yourselves. Do not stumble on the pavement

If you still want to go deep on why nature make bitter cucumbers, here is what Marcus Aurelius said on the same

For you will be ridiculed by a man who is acquainted with nature, as you would be ridiculed by a carpenter and shoemaker if you found fault because you see in their workshop shavings and cuttings from the things which they make

And yet they have places into which they can throw these shavings and cuttings, and the universe has no external space;

…and do not forget what Confucius said

It is better to light one small candle than to curse the darkness.
