An incredible michelin rated French restaurant

The Michelin guide does a great job explaining this restaurant, starting with the name, “which comes from gastronomist Brillat-Savarin’s famous words, ‘A chef must be like an alchemist’, and the menu lists only the ingredients, piquing the interest as to what kind of dishes will be served. The masterful combinations create a fusion of flavours — one of the more original dishes is lentils with powdered foie gras. The dessert, served with cheese espuma and salad, is finished off with a melted butter sauce.”
