Can we eat carrot greens!? Is it safe? This is your question, right? And the answer is YES! You can eat carrot greens without worrying about anything.

Carrot greens are delicious and loaded with nutrients! They are considered as edible and they are rich in protein, minerals and vitamins. It tastes little bitter but still you can find the earthy sweet flavor at the end. It can be eaten raw in salad or salsa. But I consider sauteing the greens with oil, onion, garlic and some spices make the dishes more tasty.

Carrot greens sabzi (aka carrot top stir-fry), a dish made with carrots, carrot greens and Indian spices. If you haven’t tried any dishes of carrot greens, then I hope this will work. Try it out and let me know your favorite way of eating the carrot greens.

P.S.: This is my first attempt. I really don’t know much about carrot greens. But the recipe is too good.

Servings: Serves 2–3

Ingredients:

1 cup carrot greens, finely chopped (well washed)

2 medium carrots, chopped

1 small onion, finely chopped

1/4 cup coconut, grated (frozen or fresh)

1/4 tsp turmeric powder

1/4 tsp mustard seeds

1/2 tsp cumin seeds

1/4 tsp urad dal (optional)

1 tbsp rasam powder (garam masala powder) (optional)

2 dry red chilies

10 curry leaves

2 tbsp oil

Salt to taste

1/4 cup water (more or less)

Method:

  1. Heat oil in a deep skillet over medium flame. Add mustard seeds, cumin seeds, urad dal, dry red chilies and curry leaves. Let it splutter.
  2. Add onion and saute until golden brown.
  3. Add finely chopped carrot greens. Saute it for 2 mins.
  4. Add chopped carrots, turmeric powder and salt. Mix altogether.
  5. Pour 1/4 cup of water, mix once and cover with a lid. Simmer it for 10 mins or until greens and carrots are soft.
  6. Add rasam or garam masala powder and check & adjust the taste, if required. Add more water and cook for another 2 mins if its not cooked well.
  7. Add grated coconut, mix well and turn off the flmae. Tasty and unique Carrot leaves subzi is ready to taste.
  8. Serve this sabzi (stirfry) with roti or steamed rice & rasam.

Note:

> Substitute the dry red chilies with red chili powder.

> Adding rasam powder is totally optional.

> Add ginger- garlic paste and your choice of vegetables to pair with carrot greens like potato, sweet potato, cauliflower, broccoli or chow chow etc.
