Funny rice!!
Fenugreek rice / Methi rice recipe
Fenugreek is one of the healthiest green leafy vegetable. It has a unique flavour that is slightly bitter but very appealing to the taste buds. Interestingly, it is used both as a herb (the leaves) and as a spice (the seeds). Try this an aromatic rice for your lunchbox or dinner.
Servings: Serves 2–3
Ingredients:
1 cup basmati rice, cooked (or your choice of rice)
1/2 cup fenugreek leaves (methi), finely chopped
1/2 mixed vegetables, chopped (beans, carrots, green peppers)
1 small onion, finely chopped
1 small tomato, finely chopped
1 garlic clove, finely chopped
1/4 tsp mustard seeds (optional)
1/4 tsp cumin seeds
1 bay leaf
1/4 tsp turmeric powder
1/2 tsp red chili powder
2 tbsp oil (or ghee)
Salt to taste
Method:
- In a large wok (or frying pan), heat oil (or ghee) on a medium flame.
- Add mustard seeds, cumin seeds, bay leaf and let it splutter.
- Add onion and garlic. Sauté till lightly browned.
- Add tomato and fry it for a minute.
- Add fenugreek leaves, chopped vegetables, turmeric powder, salt and mix well.
- Sprinkle some water and let it cook for 3–4 mins by stirring occasionally.
- Add red chili powder and cooked long grained rice. Gently, mix all together.
- Cover the lid and cook on a low flame for another 3–4 mins. Then turn off the flame.
- Methi rice/ fenugreek rice is ready to taste.
- Serve hot with raita or tomato ketchup and Enjoy ;)
Note:
- It is important that the rice is cooked and cooled down, else it will begin to break while mixing.
- You can make it without onion and garlic.
- You can add 2 tbsp of lemon juice too.
- Add sweet corn for more fun!!!
