Funny rice!!

Fenugreek rice / Methi rice recipe

Fenugreek is one of the healthiest green leafy vegetable. It has a unique flavour that is slightly bitter but very appealing to the taste buds. Interestingly, it is used both as a herb (the leaves) and as a spice (the seeds). Try this an aromatic rice for your lunchbox or dinner.

Servings: Serves 2–3

Ingredients:

1 cup basmati rice, cooked (or your choice of rice)

1/2 cup fenugreek leaves (methi), finely chopped

1/2 mixed vegetables, chopped (beans, carrots, green peppers)

1 small onion, finely chopped

1 small tomato, finely chopped

1 garlic clove, finely chopped

1/4 tsp mustard seeds (optional)

1/4 tsp cumin seeds

1 bay leaf

1/4 tsp turmeric powder

1/2 tsp red chili powder

2 tbsp oil (or ghee)

Salt to taste

Method:

  1. In a large wok (or frying pan), heat oil (or ghee) on a medium flame.
  2. Add mustard seeds, cumin seeds, bay leaf and let it splutter.
  3. Add onion and garlic. Sauté till lightly browned.
  4. Add tomato and fry it for a minute.
  5. Add fenugreek leaves, chopped vegetables, turmeric powder, salt and mix well.
  6. Sprinkle some water and let it cook for 3–4 mins by stirring occasionally.
  7. Add red chili powder and cooked long grained rice. Gently, mix all together.
  8. Cover the lid and cook on a low flame for another 3–4 mins. Then turn off the flame.
  9. Methi rice/ fenugreek rice is ready to taste.
  10. Serve hot with raita or tomato ketchup and Enjoy ;)

Note:

  • It is important that the rice is cooked and cooled down, else it will begin to break while mixing.
  • You can make it without onion and garlic.
  • You can add 2 tbsp of lemon juice too.
  • Add sweet corn for more fun!!!
