Huruli saaru / Horse gram rasam / Kudu saaru

Horse gram seeds are more beneficial to our health and is an excellent source of iron and calcium. Try this Udupi style saaru and add some garlic for an authentic flavor.

Servings: Serves 2–3

Ingredients:

½ cup horse gram (huruli kalu)

2 cups water

½ cup tamarind extract

1 tbsp. jaggery (or as required)

1 tsp. turmeric powder

Salt to taste

For masala:

1 tsp. coriander seeds

1½ tsp. cumin seeds

2 dry red chillies

A pinch of asafoetida (hing)

Few curry leaves

¼ cup coconut, grated (5 tbsp.)

For tempering:

2 tbsp. coconut oil

½ tsp. mustard seeds

2 garlic cloves, finely chopped (optional)

Few curry leaves

Method:

  1. Wash horse grams and pressure cook with 2 cups of water for 5–6 whistles.
  2. Then, drain the water and collect it in a bowl.
  3. In a small pan, dry roast the masala ingredients except the coconut.
  4. Grind the roasted masala with coconut and well cooked horse gram in a food blender.
  5. In a thick bottom kadai, boil the tamarind extract, jaggery, turmeric powder and salt with little bit of water.
  6. Now add masala paste and drained water. Stir well and let it boil on a medium flame.
  7. In this meantime, heat oil in a small pan and add mustard seeds & chopped garlic. Fry until the garlic turns to golden brown. Then add curry leaves.
  8. Pour this over the boiling saaru and mix well. Turn off the flame.
  9. Now the Huruli saaru is ready to taste with steamed rice.

Note:

  • Serve Kerala Matta rice(red rice) instead of white rice with Huruli saaru. It’s a great combination.
  • You can use sprouted horse gram for this saaru.
  • Enjoy the saaru with Palya of your choice and papad.
