Instant pot Vegetable Biryani

You are going to love this aromatic and flavorful one-pot, i mean “instant pot” biryani loaded with vegetables. Now its simple enough to make biryani on a busy weeknight with instant pot. So, heartily thanks to instant pot.

Servings: Serves 2

Ingredients:

For biryani:

1 cup rice, soaked 15 mins.

1 small onion, chopped

1 tsp ginger-garlic paste

1 cup mixed vegetables, (beans, carrot, cauliflower), chopped

1/4 tsp fennel seeds

1/4 tsp turmeric powder

1/2 tsp red chili powder, (less or more)

1/4 tsp briyani masala powder

2 tbsp curd

1 bay leaf

1 tbsp oil

1 tbsp ghee

1.5 cup water

Salt to taste

3 tbsp coriander leaves, finely chopped

For raita:

1 cup curd

1/2 carrot, shredded

1/2 onion, finely chopped

Salt and pepper powder to taste

Method:

  1. Turn on the saute button.
  2. Heat oil & ghee (total 3 tbsp), add fennel seeds & bay leaf.
  3. Saute onion, ginger garlic paste for a minute.
  4. Add vegetables & saute them well.
  5. Add turmeric powder, red chili powder, biryani masala powder and 2tbsp of curd. Mix altogether.
  6. Add 1 cup rice (soaked it for 15mins), 1.5 cup water and salt to taste. Give a very good mix.
  7. Press cancel and close the instant pot with pressure valve to sealing. Select Manual/ Pressure cook (Hi) and adjust the cook time to 6 mins.
  8. Let the pressure release naturally for 10mins and then release the remaining pressure manually. Open the pot and fluff the rice with a fork.
  9. Garnish the veg biryani with coriander leaves and its ready to taste.
  10. Enjoy the quick and tasty veg biryani with raita !

For raita:
1. Mix the shredded carrot and finely chopped onion in a bowl with curd by adding salt and pepper powder.
