I am presenting you a delicious, tasty and easy instant pot recipe of vegetable chow mein with peanuts. Surprise your beloved with a Valentines special dinner!❤☺️

Yes! as I said, it is very easy to prepare. And it will take around 20–25 minutes to cook and serve. Here, I’ve used Spaghetti for instant pot recipe. Its your choice to select chow mein or hakka noodles. And about adding veggies: I like to add beans, carrots, red bell pepper, green onions and broccoli in this easy chow mein recipe. You can add your favirote veggies to make it more delicious.

Servings: Serves 2

Ingredients:

8 oz spaghetti , broken into half (or hakka noodles)

1.5 cup water (or vegetable broth)

1/2 cup green beans, thinly sliced

1 Carrot, peeled and sliced into matchsticks

1/2 cup Red bell Pepper, thinly sliced

1/4 cup Green onion, chopped (white and green part divided)

1/2 cup Broccoli, cut into small florets

1 tbsp butter

1 tbsp ginger- garlic, minced

For sauce:

2 tbsp oil (vegetable oil/ sesame oil)

1 tsp soy sauce

1.5 tsp tomato ketchup

1 tsp honey

Salt to taste

Black pepper powder to taste (optional)

For garnishing:

2 tbsp roasted peanuts, crushed

Method:

  1. In a bowl, add all the sauce ingredients. Whisk until evenly combined.
  2. Press the saute button on your Instant Pot. Once it displays hot, add butter and minced garlic and ginger. Saute for a minute until garlic and ginger start changing color.
  3. Add all vegetables (green onions, beans, carrot and red pepper) except broccoli. Toss well.
  4. Push veggies to the side and to the center of the pot add combined sauce.
  5. Add broken spaghetti to the pot along with water. ( Add water until spaghetti is just covered.) Gently press the noodle with a spatula.
  6. Seal your Instant Pot and set to manual/ pressure cook and cook on high pressure for 4 minutes with the pressure valve to sealing position.
  7. When Instant Pot is done cooking, do a quick pressure release.
  8. Open the lid and add the broccoli florets. Stir the noodles with tongs for few time. Close the lid for 3 minute so the broccoli get cooked (do not pressure cook in this step).
  9. Open the lid and add green onion greens, if you reserved it for garnish. Serve the noodles with crushed peanuts on top and its ready to taste!
