Peas pulao / peas rice recipe

Peas pulao is the simplest of rice preparations savoured across India. Only fresh green peas and very few spices are needed.
Servings: Serves 2
Ingredients:
½ cup fresh green peas
1 cup basmati rice
1¾ cup water ( or 1½ cup )
1 onion, thinly sliced
½ tsp cumin seeds
1 cinnamon stick
2 cloves
2 green cardamom
1 bay leaf
1 garlic clove, finely chopped
1 green chilli
3 tbsp ghee (clarified butter)
Salt to taste
Method:
- First, wash and soak basmati rice for 20 mins. Then drain the water completely.
- In a pressure cooker, heat ghee and add cumin seeds, cinnamon stick, cloves, cardamom, bay leaf and green chilli. Saute well.
- Add garlic and onion. Fry until the raw smell goes off.
- Now, add green peas and basmati rice. Saute it for a minute.
- Add water and salt. Mix well and cover the lid.
- Pressure cook for 2 whistles on medium-high heat.
- Let the pressure settle down. Then open the lid and gently fluff the rice.
- Now the green peas rice is ready to taste. Serve hot with raita or dal.
Note:
- Use fresh green peas for better taste.
- You can skip few spices if you want. Add only cumin seeds, bay leaf and the cinnamon stick.
- You can also cook this pulaav in a thick bottom pot. Cooking method is same as mentioned above. But cook the rice until water is absorbed and the rice grains are cooked.
- If you are cooking in a pressure cooker, you can use any kind of rice grain.
