This is a simple post with a simple recipe. Bajji is a quick and easy Indian style snack which can be prepared within 15 minutes. And it does not require much ingredients. Today I am sharing the tasty and fluffy bajji (pakoda/ fritters) recipe made with thinly sliced potato with some Indian touch.

It is spicy and delicious evening snack and serves as a great appetizer for any party. I’ve shared another simple pakoda recipe (snacks) made with Dill leaves. Find the recipe here.

Servings: Serves 2–3

Ingredients:

2 medium potatoes, thinly sliced

3/4 cup besan flour ( chickpea flour)

5 tbsp rice flour

1 tsp red chili powder

1/4 tsp turmeric powder

A pinch of asafetida (hing)

1/4 tsp cooking soda (optional)

Salt to taste

1/4 cup water or as required

Oil for deep frying ( 2 cups)

Method:

  1. Wash and peel the potatoes very well. Use the mandoline slicer or sharp knife to slice the potatoes into thin rings. (Don’t make the slices very thick else it will not get cooked inside)
  2. In a mixing bowl, add all ingredients (except potato and oil) and start making the batter by adding little water. Make sure there is no lump in the batter. The batter should be thick like pancake batter. (Don’t make it too thin)
  3. Heat the oil in a deep frying pan. Dip each potato slices in the batter, turn to coat well on both the sides. Carefully drop one by one into the hot oil.
  4. Turn over to cook well on both sides till golden brown. Drain off the potatoes in a paper tissue.
  5. Crispy potato bajji is ready to taste.
  6. Serve hot with tomato ketchup or coconut chutney along with Indian Masala Tea.
  7. Enjoy!!
