Rava upma with vegetables / Uppittu recipe

Upma is one of the most popular breakfast item in South India. It is a quick preparation using common ingredients, and so it can be made without much ado.
Servings: Serves 2
Ingredients:
1 cup rava (semolina)
2½ cup water
½ cup vegetables (beans, carrots, capsicum), chopped
1 medium sized onion, finely chopped
4 tbsp coconut oil
½ tsp mustard seeds
¼ tsp cumin seeds
½ urad dal (split black lentils)
1 green chili
½ tsp ginger, finely chopped
Few curry leaves
Salt to taste
Coriander leaves, for garnish
Method:
- First, dry roast the rava in a kadhai on a medium flame for 4 to 5 minutes, while stirring occasionally. Keep aside.
- In a small pot, boil 2½ cups of water.
- In a meanwhile, heat oil in a kadhai. Add mustard seeds, cumin seeds, urad dal and curry leaves. Let it splutter.
- Add green chili, ginger and onions. Sauté on a medium flame for a minute.
- Add vegetables and fry it for a minute. Then, add 3–4 tbsp of water and cook the vegetables for 2 mins.
- Now, add dry roasted rava and fry it with oil and veg mixture for 2–3 mins.
- Reduce heat to low and pour the boiling water and keep mixing.
- Add salt and mix till the rava absorbs all the water and the consistency becomes thick.
- Allow this mixture to cook for about 2 minutes, stirring constantly. Adjust the taste, if required and turn off the flame. Serve immediately.
- Rava upma is ready to taste with garnished coriander leaves.
Note:
- Add vegetables of your choice.
- Can add 2 tsp of lemon juice before serving the upma.
- Add a tsp of ghee for more flavor.
- The measurement of rava and water should be 1:2.
