Baked Mini Donuts

My son loves donuts but most shop bought ones contain eggs so I came up with this recipe having read a post that used familiar ingredients that I use for all my egg free baking. It’s really easy to make and these dainty treats are so scrumptious that one donut just isn’t enough!
Ingredients:
Dry mix:
- 1 cup self rising flour
- Just over 1/2 cup castor sugar
- 1 teaspoon baking powder
- Generous grating of nutmeg
Wet mix:
- 150 natural sour yoghurt
- 2 and 1/2 tablespoons sunflower oil
- 1/2 teaspoon vanilla extract
Decorations:
Any of these variations:-
- Melted chocolate and chopped hazelnuts (or nut of choice)
- Melted butter and cinnamon sugar
- Melted chocolate and sugar hundred and thousands
Method:
- Sieve the flour, castor sugar, baking powder and nutmeg together in one bowl.
- Whisk the wet ingredients separately in another bowl
- Add the wet mix to the dry ingredients and fold gently to combine
- Put the mixture into a greased and floured mini muffin baking tray
- In a pre-heated oven bake at 180c for 10 to 12 minutes or until a knife inserted in the middle of the donut comes out dry
- Once baked, decorate by dipping in melted butter and rolling in cinnamon sugar or glaze the top with melted chocolate and sprinkle nuts or sugar hundred and thousands.
