Egg Free Recipe

Here is my afternoon tea recipe for my chocolate brownies. Normally I would serve these with vanilla ice cream but cut into bite size pieces and dusted with icing sugar they are perfect for a tea party.

This recipe makes 9 medium slices or 18 small slices.

Ingredients:

  • 1/2 cup plain flour
  • 1/2 cup cocoa powder
  • 1 tablespoon caster sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/8 teaspoon salt
  • 1 can (397 gms) sweet condensed milk
  • 1/2 cup (115 gms) butter at room temperature
  • 2 tablespoons thick yoghurt
  • 1 teaspoon vanilla extract
  • 1 teaspoon instant coffee
  • 1/2 cup hot water

Decorations:

  1. Icing sugar

Method:

  • Sieve the flour, cocoa powder, baking powder, baking soda and salt together in one bowl
  • Whisk the butter, condensed milk, sugar, yoghurt and vanilla extract together until smooth in another bowl
  • Add the sieved dry ingredients slowly to the above mixture and whisk to combine until light and fluffy.
  • Dissolve the coffee in the hot water and mix into the batter.
  • Put the mixture into a greased and floured square brownie tin.
  • In a pre-heated oven bake at 180c for 20/25 minutes or until a knife inserted in the middle of the cake comes out dry
  • Once baked, allow to cool
  • Decorate with a dusting of icing sugar
