Egg Free Recipe
Here is my afternoon tea recipe for my chocolate brownies. Normally I would serve these with vanilla ice cream but cut into bite size pieces and dusted with icing sugar they are perfect for a tea party.
This recipe makes 9 medium slices or 18 small slices.
Ingredients:
- 1/2 cup plain flour
- 1/2 cup cocoa powder
- 1 tablespoon caster sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/8 teaspoon salt
- 1 can (397 gms) sweet condensed milk
- 1/2 cup (115 gms) butter at room temperature
- 2 tablespoons thick yoghurt
- 1 teaspoon vanilla extract
- 1 teaspoon instant coffee
- 1/2 cup hot water
Decorations:
- Icing sugar
Method:
- Sieve the flour, cocoa powder, baking powder, baking soda and salt together in one bowl
- Whisk the butter, condensed milk, sugar, yoghurt and vanilla extract together until smooth in another bowl
- Add the sieved dry ingredients slowly to the above mixture and whisk to combine until light and fluffy.
- Dissolve the coffee in the hot water and mix into the batter.
- Put the mixture into a greased and floured square brownie tin.
- In a pre-heated oven bake at 180c for 20/25 minutes or until a knife inserted in the middle of the cake comes out dry
- Once baked, allow to cool
- Decorate with a dusting of icing sugar
