Orange & Banana Mini Loaves

I enjoy making mini treats and recently I bought some mini loaf tins. This is the first treat that I made for the family as a afternoon tea time snack. The addition of orange zest inside and as a glaze on top gave these banana loaves an extra dimension. I hope you enjoy these orange and banana loaves as much as we do.
Ingredients:
Dry mix:
- 1 & 1/2 cup self rising flour
- 1/2 cup instant oats
- Just over 1/2 cup castor sugar
- 2 teaspoons baking powder
- 1 teaspoon orange zest
Wet mix:
- 200ml natural sour yoghurt
- 5 tablespoons sunflower oil
- 3 small bananas chopped
- 1/2 teaspoon orange extract
Decorations:
- A little orange syrup mixed with a teaspoon of orange zest for glaze
Method:
- Sieve the flour, castor sugar and baking powder together together in one bowl. Add the oats and 1 teaspoon orange zest
- Whisk the wet ingredients separately in another bowl
- Add the wet mix to the dry ingredients and fold gently to combine
- Put the mixture into a greased and floured mini loaf tins
- In a pre-heated oven bake at 180c for 15 minutes or until a knife inserted in the middle of the loaf comes out dry
- Once baked, decorate by brushing with orange syrup and orange zest
