Strawberry Celebration Cake

With strawberries in abundance in the shops I bought a large box and wanted to make something that was extra special to welcome my son who returns from holiday today. I came up with this recipe and was very pleased with the way the texture of this cake came out and the aroma of strawberry was extremely appetising.
Ingredients:
Dry mix:
- 2 cups self rising flour
- 1 1/2 teaspoons baking powder
- 2/3 cup castor sugar or less depending on your taste and sweetness of strawberries
Wet mix:
- 200 ml fresh strawberry pulp ( I crushed about 12 large strawberries with a blender)
- 50 ml sour yoghurt (either dairy or non diary)
- 5 tablespoon sunflower oil
- 1 teaspoon vanilla extract
Decorations:
- Fresh strawberries
- 1 packet vegetarian friendly strawberry flavour jelly
- Fresh vanilla whipped cream (dairy or non dairy) to serve
Method:
- Sieve the flour, castor sugar and baking powder together in one large bowl
- Whisk the wet ingredients separately in another bowl
- Add the wet mix to the dry ingredients and fold gently to combine
- Put the mixture into a greased and floured flan baking tray
- Bake at 180c for 20 to 25minutes or until a knife inserted in the middle of the cake comes out dry
- Once baked allow to cool
- When ready to serve, make jelly using quarter less water than stated on the packet
- Decorate cake with strawberries and glaze with the strawberry jelly. For best results don’t do this more than 4 hours before cake is to be served otherwise the cake may become too moist from the strawberries releasing their juice
- Serve with vanilla whipped cream
