If your enthusiasm for cooking is a little low then this is a great go-to dish for any occasion. Although there are a few steps involved, it’s really simple to make, really tasty and heartily satisfying. It’s definitely rich! But it makes a perfect meal to feed a crowd. Leftovers can be reheated in a loose-lidded container in the microwave, or in the oven.

The bolognese sauce is a simple mix of onion, garlic, tomato, mushrooms, and lentils, with some dashes and splashes of condiments to enhance flavour and add balance. Saute your onions mushrooms and garlic and then it’s just a matter of adding everything to a pan and cooking it nice and slow to let the lentils cook and the flavours combine. The sauce is delicious by itself, and if you’re short on time then (once the lentils are cooked) just pour it over your pasta, sprinkle with vegan parmesan and eat it as it is.

There are tons of vegan cheese sauce recipes out there, but most of them contain cashews + many more ingredients, and require longer preparation times. This cashew-free cheese sauce contains only a handful of ingredients and is ready in 3 minutes. You just need to put all the ingredients into a saucepan, bring the mixture to a boil and that’s it! No food processor, no cooking of veggies, no soaking of cashews. It’s really very easy and everyone will love the taste AND texture of this vegan cheese sauce. The tapioca flour (also called tapioca starch) adds an amazing elasticity to the sauce that’s similar to cheese. Nutritional yeast is an important ingredient for the taste because it adds a cheesy flavour. The spices are up to you, but dijon, garlic and onion powder, and also a pinch of smoked paprika, go really well.

Like the ragu, you can use this sauce on its own with pasta or throw in some cooked onions, Tofurky pieces & smoke oil to make a delicious carbonara. You can use this vegan cheese sauce for any savoury recipe that requires cheese, whether it’s pizza, nachos, gratin, pasta, or any other plant-based recipe.
