“If we all placed a greater value on health and wellness, and if we truly believed that health and wellness were crucial on the path to living at our highest potential, then I think we would begin to see more education happening in the world about these matters. Currently the food that is offered to low income families and our children in the public school system is nearly void of nutrients. Diet related diseases are the norm. These are monumental problems and I can’t change them by owning two health food restaurants, but I do hope that my food helps initiate these conversations and that conversations lead to action.”
