Verdict

Orzo soup is a hearty vegan dish that’s great for lovers of Italian food. The recipe lends itself to adding a meat-alternative, like seitan to it, although the soup is already very filling on its own! This is a very well-balanced meal, just keep an eye on the added sodium with this one. It’s a quick recipe that is easy to make and wonderful to have.

Tastiness-Likeness

Orzo is a great pasta for soups. This recipe creates a soup chock-full of Italian flavors and smells to enjoy with this pasta. The secret is the spices and you should feel free to add as much as you want as they’ll only make this soup tastier. The carrots and celery also add some heartiness to the zing of the tomatoes and the sweetness of the onions. It is a chunky soup with some chewiness coming from the orzo.

Easiness

This recipe only takes 30 minutes to make, from start to finish, and is very easy to make. The most tedious part of this recipe would be dicing the vegetables, and that says a lot! What’s more, all of the ingredients are cheap and easy to find. All of the action happens on a cutting board and in your stockpot, so you’ll cut down on dirty dishes too.

Healthiness

This recipe has a great Fat/Carb/Protein balance and is a satisfying low-calorie dish! For some added protein, you can opt for beans or lentils or seitan if you’re going for a meat-alternative. There’s plenty of nutritional variety going on in this soup which is great too. Keep an eye on the sodium in this recipe, though. The canned foods and the stock will already have their own salt and you can easily over-salt this dish if you’re not careful! I find that 1–2 teaspoons are more than enough to enhance the flavor. If you want to avoid canned foods altogether, you can buy heirloom tomatoes and sear them in the pot before adding the onions and the rest of the ingredients.
