Working as a server for the friendly old folks was my last tour of duty in the food business.

My first official job — washing pots and dishes. I can’t say that it inspired me to make a life for myself in the kitchen, but it offered a steady paycheck. This was the first time I was nearly guaranteed to get paid for my work. I was used to being stood up by my lawn service customers. My job as a dishwasher made me appreciate payment in the form of a paycheck with tax deductions and perforated folds.
