During my time behind the bar at the former NoMad in Downtown Los Angeles and as a bartender and general manager of a popular craft cocktail bar, also in LA, I gathered considerable experience pairing food and drink.

I view delivering the right combination a key element of good hospitality. The goal is to make guests feel comfortable at the same time as ensuring you take seriously the responsibility of taking their taste buds into your hands.

NoMad had and Melrose Umbrella Co. has a great reputation for putting out good-to-great burgers.

As we’ll discuss in this article, things can go wrong with a burger at two key junctures —

  • It has to come out of the kitchen well-structured and prepared or else all bets are off.
  • Equally as important, the person eating the burger can’t mess it up by — yes — asking for it well done or dousing it with ketchup, but also by drinking something that’s going to kill the vibe.

I can’t count the number of times a guest would step to the bar and needlessly spend too…
