Eggs Florentine: Tomato Optional?

Brunch. The meal with all the fame but none of the glory. We all know and love the staples of this American classic: pancakes fresh off the hot griddle, eggs sunny side up, homefries seasoned to perfection, and all the other mouth-watering options. But none of the aforementioned even compares to the delicacy of one “eggs florentine”. The classic, creamy hollandaise balanced with the bitter yet tender spinach piled on top of sturdy english muffin halves is the perfect midday meal to sink your teeth into. One question though, should the tomato be added to this dish? Wouldn’t the acidic, tangy taste of tomato complete this brunch favorite? Thoughts?
