Umm…YUM! — Breakfast Edition

I❤ breakfast foods with a passion. Wakey wakey to eggs and bakey isn’t for everyone though, so here are some mañana munchies to get you feelin’ good in the a.m.!!
1.PANCAKES

EVERYONE loves pancakes. These raw vegan pancakes are made with banana, coconut oil, gluten free flour and more simple ingredients, including some easily made, no processed sugar nutella. Yes that’s right NUTELLA. Need I say more?
2. WAFFLES

My other favorite thing besides pancakes? Waffles. Just ask Leslie Knope. I love waffles so much, I named my stuffed teddy bear Waffle. I was a weird kid…moving on. These gluten free chia and oat waffles are not completely vegan, but with a few adjustments to the recipe (ex: bananas instead of eggs) they are sure to be an all around crowd pleaser. These waffles are a definite keeper — warm and unique for sure!
3. AVOCADO TOAST

Avocado Toast is getting a lot of love these days and I gotta say, it’s much deserved. This is an easy, healthy breakfast or snack on the go. I love this recipe, which adds hummus as a little extra bite to your typical ol’ avocado toast. Of course, you can use gluten free bread or any bread of your liking, spread some hummus, slice some avocado and avocado-cadabra? Breakfast for champs!
4. CEREAL

I luuuuurve cereal. It just feels right to eat. In my heart, I know I’m making 6 year old Brookie very happy by eating cereal. It reminds me of a crisp Saturday morning cartoon day while chomping on Captain Crunch or Cinnamon Toast Crunch. But I’m, like, so totally, like, not a kid anymore! No more catchy crunch cereal for me (even if that includes a captain) and I don’t watch cartoons anymore (only on the weekends), so I have to find a healthier option to enjoy guilt free… and here it is folks! This recipe is a bit complicated but worth it if you have the time! Vegan, gluten free, raw and so many crunch-tastic benefits!
5. GRITS

Some of you may be like “grits?! What the frick is a grit?” To which I would respond, “bless your heart,” the way only condescending Southern girls like myself know how to back sass. Yes, now you know. I am from the South and, while I don’t agree with my fellow Southerners on most things, I agree with them on food. The downside to Southern food is the major unhealthiness, which is why quinoa grits is the perfect alternative! Usually grits are made with corn, which isn’t always the best for us gluten free gals, but I’ve found a great quinoa and rice alternative that is packed with protein and you won’t even know the difference! You can add quinoa grits to any grits or oatmeal recipe you normally would, whether that’s pairing it with avocado, cinnamon, or the traditional southern way of shrimp and grits (my personal fav!!)
