When hunger pangs start to bother around tea-time, nothing more satiating than a slice of moist, flavoursome banana bread, though its called a bread, probably because it is mostly baked in the shape of a loaf, but its actually a cake, which is very moist as it is loaded with bananas.

I have tried to take the bread a few notches higher on the health scale so you don’t feel THAT guilty about having it. This is one of the easier recipes and a good one to begin your baking expeditions with.

The trick is to use well ripened bananas as they lend better to the flavour as well as moisture of the cake. Feel free to experiment with the dry fruit, you can use, sultanas, raisins, blueberry, apricots or figs, or even do away with it altogether if you are not such a fan of the tarty flavour.
