10 Easy Breakfast Ideas for the Busy Caregiver

Family caregivers are extremely busy individuals, often caught in the sandwich generation, simultaneously balancing caretaking duties for young children and aging relatives. This means that self-care often gets pushed down the priority list, leaving family caregivers burnt out and lacking the nutrients needed to remain highly functional in their role. It’s important to recognize that you must take care of yourself first in order to be in a position to care for others.

Here are 10 easy (and healthy) breakfast ideas for the busy family caregiver:

  1. Baked Egg Cups

This super easy recipe can be made at the beginning of the week and saved so that you have a baked egg cup ready for each day of the week.

Start by sauteing some chopped onions and sweet potato in a pan with butter or olive oil, then distribute them evenly at the bottom of your muffin tins. Crack one egg in each tin and add cheese if you wish. Sprinkle some salt and pepper on top and let bake at 400 degrees for 10 minutes or until the eggs have cooked through.

2. Strawberry/Banana Smoothie with Peanut Butter

This fresh take on the traditional smoothie gives you that kick of protein you need in the morning to stay alert all day. Plus it tastes just like a PB&J sandwich, so the kids will love it too.

Simply blend together some ice, greek yogurt, a couple of strawberries, a banana, and a scoop of peanut butter. Adjust the thickness by adding milk or more fruit. Pour into a container and take it with you on the go.

3. Yogurt Parfait with Granola

This breakfast staple only takes a few minutes to make, and can help you feel full for longer, so that you can get everything done that your busy schedule requires.

Just grab a tupperware container and scoop in some plain or flavored greek yogurt. Sprinkle some granola on top, pumpkin seeds, and add a little honey and you’re all set for the day!

4. Hard Boiled Eggs with Protein

This is one of my favorites because it’s so quick to make and will keep you feeling satisfied until lunchtime.

As soon as you wake up, put some water to boil on the stove and add two eggs. Set a timer for 20 minutes and then continue getting ready for the day. When the timer goes off, simply unpeel the cooked eggs and deposit them into a tupperware container. Add a handful of your favorite nuts and a hunk of cheese for protein. Put a lid on top and bring it with you when you head out the door.

5. Overnight Oats

If you have a slow-cooker in your kitchen, this is a wonderful recipe that you barely have to think about in the morning. Just throw these items into the slow cooker and they’ll be ready to eat by the time you wake: 1 cup oats (non-instant), 3½ cups of water, one chopped apple, two tablespoons of butter, two tablespoons of brown sugar, and one teaspoon of vanilla extract. Stir and set to Low for 7–8 hours.

6. Peanut Butter Toast with Chia Seeds

While you’re getting ready in the morning, just pop two pieces of wholegrain toast in the toaster. When you’re ready to go, smear them with peanut butter and sprinkle some chia seeds on top. This healthy alternative to a classic breakfast is packed with fiber and protein, and your body will love you for it.

7. Quick Microwave Muffin

Did you know you can make muffins in the microwave in less than two minutes? Just add ¼ cup of quick oats to a mug, add a whipped egg, a handful of your favorite berries, and a spoonful of brown sugar. Mix everything together and microwave on high for a minute. Check to see the progress and then cook for another 30 seconds until done.

8. Cheesy Egg Sandwich

Throw an english muffin in the toaster and crack an egg into a pan with olive oil. Flip the egg, then place a piece of cheese on top. When the cheese is melted, scoop the egg onto the english muffin and you have the perfect breakfast sandwich to take on the go.

9. Turkey Bacon Scramble

Chop up a couple pieces of turkey bacon and fry them in a pan with olive oil or butter. When they’re just about done, add some whipped eggs and scramble. Chop up some basil for the top and scoop everything into a tupperware container to take with you.

10. Baked Avocado Cups

These delicious avocado cups can be baked while you’re taking your morning shower. Just preheat the oven to 350 degrees, cut an avocado in half and remove the pit. Place the halves facing up on a baking sheet. Crack one egg into each half and top them with a pinch of salt and pepper. Place them in the oven and come back in 15–20 minutes when they’re done. Top with cheese, cilantro, hot sauce or whatever other toppings you prefer and enjoy!

No matter what your caregiving situation is, it’s essential that you take care of yourself first so that you’re not pouring from an empty cup when it comes time to take care of others.
