Stuffed Bitter gourd with Mei Cai

Haha! This is a dish that only adults can appreciate due to the bitterness of the bitter gourd. Cooking in this way does reduce the bitterness, however, my kids still don’t like the taste of the bitter gourd. However, they love the meat filling with the flavorful mei cai. :)

Ingredients

1 bitter gourd (cut thickly and centre cored)

400g minced pork

4 garlic cloves (chopped)

2 stalks of mei cai (washed thoroughly & chopped)

1 tbsp brown sugar

60ml hot water

Marinade for the minced pork:

1 tbsp corn flour

1 tbsp soy sauce

dashes of pepper

1 tbsp oyster sauce

Directions:

  1. Marinade the minced pork and stuffed it into the cored bitter gourd.
  2. Pan fry the bitter gourd till brown. Dish up and set aside.
  3. In a clean wok, saute the chopped garlic till golden brown and add in the mei cai to saute till fragrant.
  4. Add in the brown sugar and the hot water. Mix well.
  5. Add in the cooked bitter gourd and let it simmer for about 10 minutes.
  6. Dish up and serve.
