Four Ways to Use Leftover Turkey

Thanksgiving is over and you have lots of leftover turkey meat. Maybe you had fewer guests than expected or couldn’t get a small enough bird for the smaller family gathering this year due to COVID.

Whatever the case may be, you need ideas to use up that leftover bird that feels fresh and not leftover-like. Here are some ideas. All of these recipes can be ready to eat in about 30 minutes.

Turkey noodle soup — serves 3 to 4

This light meal tastes great. I make this using leftover poultry all the time. It can also be made with canned chicken or a boneless skinless chicken breast dropped right into the stock and then shredded.

This recipe serves three to four and can be scaled up or down. I’ve even cooked it in my slow cooker and it turned out great.

Ingredients

1/2 to 3/4 pound shredded leftover turkey (2 cups)
1/2 cup diced carrot (about 2 small carrots)
1/2 cup diced onion (about 1 small onion)
1/2 cup diced celery (about 2 celery ribs)
1/3 cup diced fresh mushrooms (about 4 mushroom caps)
1 clove garlic, minced (about 2 teaspoons)
1 tablespoon vegetable oil
