My Dad’s Single-pot Mutton Recipe Most Suited for Singles
This is a home-style mutton curry that my father cooks. I think this is an ideal recipe for bachelors because he is otherwise no good in the kitchen. This is the only dish he makes, literally. If he can do it, so can anyone of us single people!
What you will need
Mutton- curry cut- 500 grams
Onions- 4 -5 medium sized- sliced
Garlic- 6–8 pearls- crushed
Ginger- 1 inch cube- crushed
Whole spices- pepper, cardamom, cloves, cinnamon stick, bay leaf, red chillies — to taste
Turmeric powder- 1/4 teaspoon
Coriander powder- 1/4 teaspoon
Cumin powder- 1/4 teaspoon
Salt to taste
Cooking oil or clarified butter- 4–5 tablespoons
Water- 2–3 teacups- for the gravy
Use a pressure cooker for this recipe. It will take about 45 minutes to cook.
Preparation
In a pressure cooker, add oil, whole spices and onions. Sauté till the onions turn clear, add the crushed garlic and ginger and season with salt and add powdered turmeric, cumin and coriander.
Mix the mutton and close the pressure cooker lid. Cook for 5–6 whistles.
Open the cooker lid, the meat will be softened. There will be residual water from the meat and onions, sauté to lose that water and brown the meat and onions. Now add water to form the gravy. Bring it to a boil and simmer for about 15 minutes or till the meat is soft enough to poke a fork.
Garnish with coriander. Serve hot with rice or roti!
