Serves Six! Six what? Godzilla’s mates?

For reasons too complicated to explain here, my family is trying to reduce gluten in our diet, and the big intakes are breakfast cereal and bread. And cakes. And biscuits. (Sigh)

Breakfast cereal was easily remedied by moving to rolled (old-fashioned) oats — “Scott’s Porage Oats”, no less. But who has a gluten-free cookbook to hand who doesn’t actually need one? Good old Mr Google came into play.

Shop-bought gluten-free bread is, shall we say, a less than desirable taste, but after a couple of trials making my own I think I’ve got the bread more or less sorted. Adding a couple of tablespoons of mixed seeds into the batch helps enormously.

However, even in an airtight bag, the bread hardens within a couple of days. Who knew slices needed warming under the grill to relax them? If anyone has any handy hints in this respect, please let me know.

Feeling daring, I decided to try either a fruit cake — 2.5 hrs — or cherry & almond cookies — 40 mins. Needless to say, I plumped for the cookies. Serves 6 the recipe advised.
