DIY Stir Fry Sauce

Stir fries are amazing because they are not only delicious but quick and easy to make. You start with your meat or fish, if you are adding any, then you add the veggies, and then you top it off with a delectable stir fry sauce which marries everything together. Most of the time, we buy stir fry sauce as it is cheap and tasty. But I want you to try to do it yourself with DIY Stir Fry Sauce. You only need 3 ingredients: sesame oil, soy sauce and cornflour. With my DIY sauce, I fry some frozen broccoli in ginger and garlic before adding the DIY Stir Fry Sauce and sprinkling over chilli flakes and Chinese 5 spice — the recipe for this Broccoli Stir Fry is also below. You can keep this vegetarian by adding more veggies or a meat substitute or you can add some sliced beef, diced chicken or prawns. Another reason stir fries are amazing — they let you take control, hence the ‘stir’ with the fry.

Sauce Ingredients:

□ 70ml low sodium soy sauce

□ 60ml sesame oil

□ 1tbsp cornflour

Method:

  1. To make the Stir fry sauce, pour the soy sauce, sesame oil and cornflour into a jug and whisk them together until all the lumps of cornflour have gone.

Broccoli Stir Fry — serves 2–4 people — cooking time: 30 minutes

Ingredients:

□ 1tbsp sesame oil

□ 1 thumb sized knob of fresh ginger

□ 6 garlic cloves

□ 250g frozen broccoli

□ DIY Stir Fry Sauce

□ 1tsp Chinese 5 spice

□ 1 tsp chili flakes

□ Serve with rice or noodles

Method:

  1. Peel and slice the ginger into thin match stick shapes and slice the garlic into discs.

2. In a large pan, or if you have a wok, heat the sesame oil on high and add the ginger. Fry this around for a minute or so and then add the sliced garlic and fry for another minute. (If adding in raw meat or fish, add this in now and fry until cooked)

3. Tumble in the broccoli and fry this for a few minutes until they have fully defrosted and become tender with a fork.

4. Pour in your prepared DIY Stir Fry Sauce and mix this in along with the teaspoon of Chinese 5 spice.

5. Sprinkle over the chilli flakes and stir them in, then taste to see if you are happy with the flavours.

6. When it is ready, turn off the heat and serve with either rice or noodles.
