Frittata
We’ve been following this great diet since November 2019, but it has been a bit of a challenge to come up with interesting meals that do not involve starch or sugar.
Anyway, days when we have a non-egg breakfast, I usually make an egg dish of some sort for dinner. Tonight was such a night, and I decided on a Frittata, which is a big fave around here.
What is great about a Frittata is that you can incorporate leftovers such as cooked vegetables, leftover chicken or ham, or whatever.
It’s a nice, easy dish to prepare and looks so cool when it comes out of the oven. I couldn’t resist taking a photo, of course.
