This week I’m presenting you a little twist on a classic, something I’m calling an Earl of Collins. In this drink we use Early Grey, a simple tea you’ve probably got a bag of lying around in the cupboard. What makes this drink special is the tannins in the tea, these help to produce the astringency, think that dry flavour that we expect from a cider or a glass of white wine (the longer the tea bag is steeped in the water, the stronger these tannins become).

The special touch comes from the citrus twist at the end which really helps wake the drink up. Did you know the oils in the skin are where we get that rich wonderful citrus aroma we are so familiar with from, not the fruit itself!

Glass: Tall glass

Ice: Cubed ice

Garnish: Pink grapefruit twist (lemon or orange will do)

Ingredients

  • 15ml Agave syrup (substitute with a simple syrup or light honey)
  • 20ml Pressed lemon juice
  • 50ml Cold Earl Grey tea
  • 25ml Orange juice
  • 50ml Soda water

Method

  1. Fill a shaker with the agave, lemon and orange juice add ice and shake vigorously.
  2. Pour over ice and top with the Earl Grey tea and Soda water.
  3. Serve with a twist of citrus fruit — ideally pink grapefruit
