What instantly comes to your mind when you’re told someone’s Gujrati? Food and Garba. I think most of you who are reading this will agree. I believed this strongly until I got married into a typical Gujarati family. This is not our fault in any way. Primarily the Bollywood populace has somewhere skewed the representation of the Gujrati culture.

If you remember the most famous dialogue by “Kareena Kapoor in the movie “3 Idiots” “Tum Gujarati Log Itne Cute Hote Ho… Par Tum Log Ka Khana Itna Khatarnak Kyun Hota Hai… Dhokla, Fafda, Handva, Thepla, Aaise Lagta Hai Jaise Koi Missiles Hai”.

Cut It!! This is an accusation of the misinterpretation. Though these dishes form an integral part of the Gujarati cuisine, there is way more to this.

In this blog, I’m going to discuss one such special Gujrati recipe, which is a delight in winter. Let’s take a look at the ingredients.

For Gravy

250gms of Surti papdi (only use the beans and not the cover)

4–5 strands of green Garlic

One spring onion (finely chopped)

One small finely chopped ginger

1 tbsp of green chili paste

1 Fresh palak

1 tbsp Turmeric powder

1 tbsp Coriander powder

1 tbsp Garam Masala

Salt to taste

For Muthiya

One bowl of Methi leaves

One bowl of Gram flour

1/2 bowl of wheat flour

1tsp cumin seeds

1tsp sesame seeds

salt to taste

1tbsp curd

1 tbsp turmeric powder

1 tbsp chili powder

1tbsp coriander powder

Water as required

Oil for frying

How to Make

Put the papdi beans in the cooker, add a pinch of sugar, and some amount of water.

Turn on the flame and take one whistle and release the pressure immediately.

Take out the beans in a dish and leave it for sometime

Now take water in a pan and bring it to boil. Add a pinch of salt and sugar

Now put palak in the boiling water and let it simmer for 10–20 minutes.

Once Palak is cooked thoroughly. Take it out in a bowl of cold water, or you can also put some ice to speed up the cooling process

Put the palak into the blender and make a smooth paste

Now heat the oil in the pan, add 1tsp of hing, green garlic, green chili paste, finely chopped ginger and mix them well.

Now add finely chopped spring onion and mix it well.

Now add the cooked papdi and mix it all well.

Now add 1tsp of turmeric powder 1tbsp of coriander powder and mix well.

Let the masala cook for 2–3 minutes.

Now add the palak puree to it and mix it well.

Add some salt to taste and 1tbsp of garam masala.

let it cook for another 5 minutes and turn off the gas

For Muthiya

Take a bowl

Add gram flour wheat flour

1tsp of cumin seeds, sesame seeds, Ajwain

1 tsp of turmeric powder, chili powder, coriander powder

Salt to taste, a pinch of sugar

1tbsp curd and Methi leaves

Mix all the ingredients well.

Add small quantities of water at regular intervals

Make a thick dough (so add water accordingly)

once the down is ready now make oval shape patty

Heat some amount of oil in the pan

Fry the muhtiyaa until golden brown

Add the Muthiya into the gravy and serve hot

You can eat this dish with paratha, Jowar Bhakri or regular roti
