2-step tomato pasta soup

with split peas, couscous & lentils

I cannot believe how easy this soup is to make. If you’re short on time, this is a great 1-pot, no-chopping meal. All you need to do is measure ingredients and open a couple cans!

makes: about 16 cups

ingredients
½ cup dry split peas
⅓ cup chicken bouillon granules
¼ cup pearl couscous
½ cup dry lentils
¼ cup dried onion flakes
2 tsps italian seasoning, dried
½ cup rice, uncooked
2 bay leaves, dried
½ cup small pasta shells, uncooked
1 6 oz. can tomato paste
1 28 oz. can diced tomatoes
12 cups water (3 quarts)
salt & black pepper, to taste
garlic powder, to taste

directions
step 1 In a large pot, or Dutch oven, add all ingredients but the pasta. Stir well. Season with salt and pepper and garlic powder. Bring to a boil and then reduce the heat to low. Cover and simmer for 45 minutes. Stir occasionally. (You may think that 12 cups of water is a mistake but it really is 12 cups!)

step 2 Stir in the pasta. Cover again and simmer for another 15-20 minutes.

This recipe also makes a great “soup mix” gift. Simply, layer all of the dry ingredients into a jar (putting the pasta in a separate bag) and make a recipe card for the wet ingredients.
