This is a very simple guacamole, and perhaps more appropriately ‘spruced up avocado’. It’s a great way to add zip, zing and fat to meals, and you’ll have it whipped up in a jiffy. Add some chilli if you’d like an extra punch!

Serves 4

Ingredients

2 avocados (approx. 300g flesh weight)
1–2 limes, juice
1 tablespoon olive oil
2 tablespoons chopped coriander
salt
pepper

Method

  • Roughly chop the avocado and add to a bowl with lime juice, olive oil, coriander, salt and pepper.
  • Stir to combine and adjust the seasoning depending on your taste—trust your instinct. Maybe it needs more acid from the lime, or more salt and pepper.
  • Serve with your favourite Mexican food like this chilli con carne, with cold meats and fish, or simply on its own!
