Who are we speaking with?

Leonard Jasper Springeling. Head Coffee Roaster at the Visit Coffee Roastery. At the end of 2010 I moved to Berlin and started working in specialty coffee., first as barista soon after as coffee roaster.

What’s the tool or routine you couldn’t work without?

For me as roast master it has to be the Loring F15 Falcon that we use at The Visit.

What’s the number one business trend you hope to keep up with?

The pursuit of better quality across the value chain.

What is the most unique thing about where you live?

Berlin has an incredible sense of freedom. It’s a city that is not yet settled in its ways like other European capitals like Paris, Amsterdam, or a city like London. This brings opportunity and attracts a certain crowd that is out for excitement. This goes for many fields like art, music, food culture, wine, and coffee.

If you could only use one piece of brewing equipment for the rest of your life, what would you choose and why?

AeroPress. It’s the only travel companion, together with a good hand grinder, that I can’t do without.

Is there a country of origin that you tend to favour coffee from?

Some of my favourite coffees that I have roasted and/or tasted are from Ethiopia and Kenya. For the Ethiopian coffee, it’s all about the delicate floral and citrus notes for me. The coffees from Kenya are all about the complexity and rich, deep fruity flavours.

Do you remember the first coffee you had that was more than just coffee?

I remember the first natural Ethiopian Yirgacheffe filter coffee I ever had at a friends house. It tasted so much like blueberry that it sparked my interest in coffee even more. I was always a coffee drinker, but wondered why sometimes a brew would taste great and other times it would taste horrible. This was a couple of years before Stumptown did their popup gig in Amsterdam in 2010. My first ever cupping with the Stumptown guys made me realize that it would be interesting to learn more about coffee.

Espresso of filter? Depends on the mood and the moment. Mostly Filter.

Sweet or savoury? Savoury. Or a combination of sweet and savoury.

African or South American coffee? African!!!

Painting or photography? Photography.

London coffee scene or Melbourne coffee scene? Berlin coffee scene.

Whisky or gin? Gin, but Nikka Whisky is a good second for me.
