If you’re craving a savory and filling breakfast with perfectly poached eggs, this is it! Shakshuka was one of the first middle eastern dishes that I learned how to cook. This recipe has stayed with me for over a decade at this point. It’s impressive, simple and quickly feeds a crowd!

Serves: 2

Time to prep: 5 mins

Time to cook: 7 mins

Total time: 12 mins

Ingredients:

  • 2 tbsps. olive oil
  • 1 diced bell pepper
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1 tsp. oregano
  • 2 tsps. minced garlic
  • 1 cup tomato sauce
  • 5 eggs
  • chopped parsley
  • pita bread for serving

Directions:

  1. Heat a large saute pan to med-high heat, and add olive oil
  2. When olive oil is hot, add 1 diced bell pepper, salt, pepper, oregano, and minced garlic
  3. Saute bell pepper for 3 mins
  4. Add one cup of tomato sauce and turn heat to low for a simmer
  5. Crack 5 eggs on top of the tomato sauce then cover and continue to simmer for 7 minutes
  6. Top with chopped parsley and serve hot with pita bread
  7. Enjoy!
