If you’re craving a savory and filling breakfast with perfectly poached eggs, this is it! Shakshuka was one of the first middle eastern dishes that I learned how to cook. This recipe has stayed with me for over a decade at this point. It’s impressive, simple and quickly feeds a crowd!
Serves: 2
Time to prep: 5 mins
Time to cook: 7 mins
Total time: 12 mins
Ingredients:
- 2 tbsps. olive oil
- 1 diced bell pepper
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1 tsp. oregano
- 2 tsps. minced garlic
- 1 cup tomato sauce
- 5 eggs
- chopped parsley
- pita bread for serving
Directions:
- Heat a large saute pan to med-high heat, and add olive oil
- When olive oil is hot, add 1 diced bell pepper, salt, pepper, oregano, and minced garlic
- Saute bell pepper for 3 mins
- Add one cup of tomato sauce and turn heat to low for a simmer
- Crack 5 eggs on top of the tomato sauce then cover and continue to simmer for 7 minutes
- Top with chopped parsley and serve hot with pita bread
- Enjoy!
