Imagine this: You’re at home on a gorgeous Sunday evening. The air is a bit brisk outside and a fire is crackling while you rest on the couch watching your favorite movie. In front of you is a bread bowl complete with a medley of vegetables, broth, noodles and legumes.

Can it get any better? I’ll answer that — No.

Panera’s vegetable soup has been a staple of mine for a very long time. For a nice, evening pick-me-up or a middle-of-the-day lunch craving — whatever the occasion, this is my absolute favorite soup in the entire world. The yummy creation begins with a warm tomato broth, completely meat-free so the vegans and vegetarians of the world are able to join in on the goodness, and a variety of nutritious and delicious veggies. This feel-good menu item features zucchini, Swiss chard, cauliflower, bell pepper and barley. The broth and vegetables are perfectly seasoned to taste delicious while being nutritious. To add texture to the soup, there are also yellow beans and pasta noodles for good measure, adding to the completeness of this comfort food.

Whenever I’m feeling a bit under the weather, or I’m just looking for a yummy dinner after a long day, I always, always, always think of this first.
