Directions:

  1. Melt the ghee in a large Dutch oven over medium heat. Add the bell pepper, celery, and onion. Cook until the vegetables begin to soften and the onion turns soft and translucent, which should take about 3 to 4 minutes.
  2. Next, throw in the chicken, sliced sausage, Cajun seasoning, and hot sauce. Cook and stir until everything is well combined, which should take 2 to 3 minutes.
  3. Now, add the drained tomatoes and stock and bring the mixture to a boil.
  4. Reduce the heat, cover the pot, and let it simmer until the chicken is cooked through, which takes about 15 minutes.
  5. Remove the lid and add the riced cauliflower, breaking up any clumps while stirring.
  6. Add the frozen shrimp and crank up the heat to medium-high. Push each shrimp below the surface of the hot tomato sauce and season with black pepper. Bring it to a boil and cook until the shrimp curls and turns pink in color, which should take about 6 to 8 minutes.
