Sweet Sticky Rice with Mangoes

Ingredients:

  • 2 cups uncooked glutinous (sticky) white rice, rinsed
  • 1 (13.5 ounce) can coconut milk, divided

  • 2 ripe mangoes, peeled and cubed

Directions:

  1. Begin by soaking the rice in several inches of fresh water for 30 minutes. After soaking, drain off the water so that the rice is covered by 1/4 inch of water.
  2. Place the rice in a microwave-safe bowl, cover it, and cook on high until the water has mostly absorbed but the rice is still wet. This should take about 10 minutes. Stir and continue to cook until almost dry, about 4 minutes.
  3. In a separate bowl, mix half of the coconut milk and 1 cup of sugar, stirring to dissolve the sugar. Pour this mixture over the cooked rice and stir to coat the rice. Cover and allow the rice to stand at room temperature for 20 minutes.
  4. In a saucepan, pour the remaining 1/2 can of coconut milk and whisk in 1 tablespoon of sugar, salt, and cornstarch until smooth. Bring the mixture to a simmer over medium heat, whisking constantly, and simmer until thickened, about 2 minutes. Remove from heat and allow to cool.
  5. To serve, scoop the rice into individual serving bowls and top each serving with about 2 tablespoons of the coconut sauce and several pieces of mango.

Cook’s Note: You can also steam the sweet rice using the traditional method. You may want to leave the salt out and taste the sauce before you add any.
