But if you’re serious about making a truly outstanding cowboy caviar, then let me guide you through the process.

First off, let’s ditch the canned beans and frozen corn. We’re going to start from scratch with dried black beans and fresh corn on the cob. None of this pre-packaged nonsense. We want real flavor, not the sad excuse for flavor you find in a can.

  • 1 cup corn nuts, for texture
  • Homemade tortilla chips, for serving

Method

  1. In a large bowl, whisk together the lime juice, minced garlic, ground cumin, and olive oil. Stir in the chopped cilantro and season with salt and pepper. Set aside.
  2. In a separate large bowl, combine the cooked black beans, kidney beans, fresh corn, bell peppers, scallions, cherry tomatoes, and pickled jalapeños. Toss with the prepared dressing until well-coated.
  3. Top the salad with corn nuts for texture and serve with homemade tortilla chips.
