Green Herb Sauce

This herb sauce or rather herb oil goes very well with grilled veggies, such as Grilled Oyster Mushrooms, but also with Risotto.

Blend any combination of green herbs with olive oil, salt, lime or lemon juice to taste. You can also add red or green chilis. After blending let it for 10 minutes or more as the taste of the herbs will take time to unfold.

A combination that works well is

1 cup tarragon
1 cup wild garlic
1 cup olive oil
1 red chili
2 Tbsp lemon juice
pinch of salt

I use this as condiment on top of Grilled Oyster Mushrooms, as base ingredient into Green Risotto. I have also seen this as infused oil (use more oil, then strain) as dip for bread instead of pure olive oil.
