Green Papaya Salad

Ever since I saw The Scent of Green Papaya I’ve been wanting to make this, and especially after having eating it many times at streetmarkets in Laos and Kambodia. So here goes…

Finely grate

  • 3 cups of green papaya
  • 1 cup carrot
  • original recipes also add raw green beans

Add and mash (ideally in a big mortar) the ingredients for the dressing

  • red chili’s sliced
  • lemon grass talk finely shopped
  • 3–4 makrut lime leaves finely sliced
  • 1 T Bsp Markut peel or thinly sliced Makrut lime (careful with lime juice / lime leaves if you add sliced lime)
  • 2 cloves garlic
  • 1 tsp palm sugar
  • 1–2 Tbsp soy sauce
  • 1–2 Tbs lime juice
  • 1 Tsp Tamarind paste (not sure about that)
  • 3–4 Tbsp semsame oil

Once well smashed, addd

  • 1/2 cup coriander leave
  • 1/4 cup mint leaves
  • 1/4 cup thai basil leaves

sprinkle with 1/4 cup crushed, roasted and lightly salted peanuts.
