Vegan Mayonnaise 1

There are a number of ways to make vegan mayonnaise, this one is straight forward.

Soak 1 cup of Cashew nuts in water, then put in in a strong blender of food processor. Add 1 Tbsp mustard, 1 Tbsp lemon juice, salt, pepper, paprika or smoked paprika to taste.

While blending slowly add a high quality oil such as rapeseed for instance and keep blending until you have a nice consistency. I personally am not a fan of olive oil as it can add a bitter taste to mayonnaise.
